Ingredients:
Equal amounts of the following spices:
• cassia (chinese cinnamon or ordinary cinnamon will do)
• whole cloves
• whole star anise
• fennel seeds
• sichuan pepper (quite different from ordinary pepper)
Method: Grind equal measures of the above spices. Use to sprinkle into soups, stews, marinades and barbecue sauces.
Store in a sealed container in a cool, dry place. |
