Ingredients:
• 2 kg fresh filet of salmon
• 150gm sugar
• 1dl of water
• 15gm white pepper corn
• plenty of dill
Ingredients " Head Waiters' Sauce:
• 2 tbsp Swedish mustard
• 1 tbsp dark French mustard
• 3 tbsp sugar
• juice of ½ lemon
• 1 tbsp red wine vinegar
• 1 tbsp Kikkoman soy sauce
• few splashes of Worcestershire Sauce
• ½ tbsp ground white pepper
• 1 tbsp water
• 1½dl rapeseed or corn oil
• at least one bunch dill
Method:
1. Mix the sugar, salt, water, and pepper. Rub the salmon with the mixture, cover with the dill and leave to mature in the fridge for 2 days.
2. To make the sauche, stir together all the ingredients except the dill until the sugar has dissolved properly. If the sauce is too thick, thin it with a little extra more water.

Chop the dill finely and stir into the sauce.

Place the sauce in the refrigerator to mature for a few hours.
